With 6 or so weeks still left in my pregnancy and it being the hottest part of the summer, I’m really enjoying a mocktail in the afternoon. The kids always want to be outside after naptime, but since I’m generally not in the mood to haul them anywhere in the car, we play in the backyard. They kick around the soccer ball, play in the water table, or take their diggers in the rocks, and I sit and sip a mocktail like this ginger raspberry mocktail. One of my favorite cocktails is a Moscow mule, and with the ginger beer and lime in this cocktail it reminds me of that. Some muddled raspberries add an extra touch for a tasty mocktail.
Any type of berry would be delicious in this mocktail, and it would also be delicious with a splash of vodka in it to make it a cocktail. Think a raspberry Moscow mule! But with mocktails, I’m specifically creating them without alcohol to make sure they are just as delicious and refreshing while staying alcohol-free. With this being my fourth pregnancy, I always appreciate when I attend a special event and have a non-alcoholic option available for me. And since lots of people don’t drink alcohol for lots of reasons, I recommend serving something delicious like a mocktail or fancy lemonade when you host an event.
This ginger raspberry mocktail is exactly what I plan to be drinking over the next 6 weeks! I have two more mocktails to share before the end of my pregnancy that I’m really excited about, so be sure to check back for those recipes!
- ½ cup fresh raspberries (or any berry!) + more for garnish
- 12 oz. ginger beer
- Juice of 1 lime
- Fresh mint leaves, for garnish
- In a small pitcher or in two glasses, muddle the raspberries. Add the ginger beer and lime juice and carefully stir to combine.
- Garnish with fresh mint and additional raspberries!
