Mother’s Day is just around the corner, and I can already tell you that this would be the perfect Mother’s Day breakfast. On Mother’s Day weekend I like a little bit of alone time the day before Mother’s Day, but on Mother’s Day I just want to be with my kids, eat good food, and relax. A break from the normal mom duties is just what mom needs, and this chocolate strawberry croissant French toast bake is so easy to make, even your kids can throw it together. Topping with fresh whipped cream and extra fresh berries is optional but highly encouraged. No need to add maple syrup unless you really want to, this French toast bake is perfect as is. With buttery croissants, chocolate chips, strawberries, and a few little extras mixed into the batter, it’s the perfect indulgent breakfast.
How to Make Chocolate Strawberry Croissant French Toast Bake
- First, tear up your croissants and throw them in a baking dish. The amount doesn’t have to be perfect! I used about 14 mini croissants here. This recipe is very forgiving!
- Mix together your eggs, milk, and cream. Add the vanilla extract, almond extract, brown sugar, and cinnamon. Pour this over the croissants and mix to combine.
- Add the chocolate chips and chopped fresh strawberries and mix again. Make sure the croissants are all coated with some of the egg and milk mixture.
- Then bake! I like to serve this warm with fresh whipped cream, extra fresh strawberries, and some chocolate shavings.
What to Serve with a Croissant French Toast Bake
- This is definitely a sweet morning treat, so some bacon or sausage as a savory option would be delicious!
- Coffee! Always coffee with sweet breakfast like this.
- Because it’s Mother’s Day, you can’t go wrong with a mimosa or bloody Mary. I also love making my brunch punch during the spring and summer, it’s the perfect recipe and you can make a pitcher to serve a crowd.
This recipe truly is so easy to make. Even if you don’t typically cook but want to make the mom in your life a special breakfast, this is the way to go. Buttery croissants are delicious in this French toast bake, I even used croissants that were a day old, and I think that makes the texture even better. - 10-12 croissants, torn into pieces
- 12 eggs
- ½ cup heavy cream
- ¾ cup whole milk
- ¼ cup brown sugar
- 1 tsp. vanilla extract
- ½ tsp almond extract
- ½ tsp. cinnamon
- 1½ cups chopped fresh strawberries + more for topping
- ¾ cup chocolate chips
- Whipped cream for topping
- Preheat oven to 350 degrees Fahrenheit. Place the torn croissants into a baking dish. 9 x 13 will work well, as will any that are slightly smaller or even a round baking dish. As long as the croissants fit into the dish, the dish will work!
- In a medium bowl, whisk together eggs, cream, milk, brown sugar, almond and vanilla extracts, and cinnamon. Pour over the croissants and mix to combine.
- Add the strawberries and chocolate chips to the baking dish and mix to combine.
- Bake for 45-50 minutes until the center is set. Allow to cool slightly, then top with fresh whipped cream and serve.
