I love a good Rice Krispie treat. They are so easy to make and never disappoint. There are so many delicious Rice Krispie treat recipes floating around the internet, but I love any of them with chocolate in them. Those peanut butter Rice Krispie treats with chocolate on top? They speak to me. Naturally given my love of chocolate and of Rice Krispie treats these chocolate coconut Rice Krispie treats were a must.
The coconut in these is subtle, but the chocolate is not. The chocolate is delicous and decadent and in every bite. They’re so easy to make and the perfect easy dessert. They’re great for summer too because you can pack them for a picnic, serve them at a BBQ, or have around for a snack. You know you want to.
- 6 tbsp. butter
- 16 oz. marshmallows
- ½ cup cocoa powder
- 8 cups Rice Krispie cereal
- 1 cup sweetened shredded coconut
- ½ cup chocolate chips
- Spray a 9 x 13 baking dish with nonstick cooking spray.
- In a large pot, melt butter. Once melted add marshmallows and stir until melted. Once melted, turn heat to low.
- Add cocoa powder and stir to combine.
- Add cereal and coconut and stir to combine. Remove from heat. Stir in chocolate chips and immediately press into prepared baking dish.
- Using a spatula sprayed with nonstick cooking spray, press the Rice Krispie treats down firmly.
- Let set until cool. Slice and serve.
