Who doesn’t love a good casserole? They’re easy to make ahead, generally freeze well, and serve well as leftovers. I love a casserole that contains all of my food groups, making dinnertime a breeze. This chicken broccoli quinoa casserole has exactly what it says in the title in it, along with some cheddar cheese for good measure. A lot of casseroles are very creamy, which I love, but this is kept a little lighter using chicken broth instead.
Lately I’ve also been making a lot of meals that are easy and could potentially freeze well. Our third baby is due in just 5 weeks and as much as I love to cook, getting dinner on the table can be a struggle when you have a newborn. I remember when our first was born, I would make dinner at 9 a.m. if I had a free moment because I didn’t know what the rest of the day will bring. This time around I’m going to make some freezer meals to have on hand for the first few weeks and plan to do a big blog post on everything I make.
This recipe will definitely freeze well, and is perfect for a weeknight meal because everything is cooked in one dish. Packed with broccoli and protein-packed quinoa and chicken, along with some cheese for good measure, it’s healthy and comforting. For those of you who do like to meal prep, this can easily be made a day in advance or the morning of the day you plan to serve it. Leftovers keep well for lunch or dinner the next night!
Whenever you make this, you’ll be glad that you did. Everyone will love it, maybe you most of all with the ease of it!
- 1 cup dry quinoa, rinsed and drained
- 2 cups water
- 2 cups cooked shredded chicken
- 3 cups chopped fresh broccoli florets
- 2 cups chicken broth
- 1 tsp. salt
- 1 tsp. poultry seasoning
- ¼ tsp. ground black pepper
- 1½ cups shredded cheddar cheese
- Preheat oven to 350 degrees Fahrenheit.
- Place quinoa and water in a small saucepan and cook until water is gone. Cover and remove from heat.
- In a bowl, combine chicken, broccoli, chicken broth, salt, poultry seasoning, pepper, and cooked quinoa. Add cheese and mix to combine.
- Spray a baking dish with nonstick cooking spray and add casserole mixture.
- Bake for 30-40 minutes until bubbling and broccoli is tender.
