Overnight oats are such a great way to meal prep your breakfast. You can eat them cold or hot the next day (I prefer them hot), but no matter how you enjoy them it’s a healthy, fast breakfast option that will keep you full until lunch. Bursting with blueberries with a subtle cardamom flavor and sweetened with maple syrup, this is a breakfast recipe you’ll go to again and again. Just a few ingredients and a few minutes of prep and you have the perfect breakfast ready for the morning. Oatmeal is one of my favorite breakfasts, and my kids too. Oatmeal is the perfect base to add any flavors you want, and blueberries and cardamom are a flavorful combination you’ll go to again and again.
Here’s what you need to make blueberry cardamom overnight oats:
- Rolled oats
- Unsweetened vanilla almond milk (any milk will work but I like almond milk with my oatmeal)
- Chia seeds
- Pure maple syrup
- Blueberries (fresh or frozen will work)
- Cardamom
Making overnight oats is truly simple. Combine all the ingredients in a mason jar and let sit overnight, then enjoy in the morning. I have never gotten on the trend of eating overnight oats cold, but I do like eating them warmed up! Conveniently mason jars are microwave safe, but I like to transfer mine to a bowl and add extra blueberries and a drizzle of maple syrup. Sometimes I sprinkle them with hemp hearts for a nutrition boost.
- ½ cup rolled oats
- ½ cup unsweetened vanilla almond milk
- ½ tbsp. chia seeds
- 2-3 tbsp. pure maple syrup
- ½ tsp. cardamom
- ½ cup blueberries (fresh or frozen)
- Combine all ingredients in a mason jar and refrigerate overnight.
- In the morning, enjoy your overnight oats cold or warmed up. Serve with extra blueberries and maple syrup.
