Do you like tofu? I think a lot of people don't because it kind of tastes like...nothing. That can be a bad thing if you don't know how to prepare it, but it can be a great thing if you do! Italian wedding soup is one of my favorites. Vegan Enchilada Soup
I love a good recipe that cleans out my refrigerator and pantry. Pasta recipes are a great way to do that, but so is this vegan enchilada soup.
