Every time I prep overnight oats for breakfast, I feel like I have my life together in the morning. It’s a mystery why I don’t prep them more often! I’m awake between 4:30 and 5am most days of the week to work out, but then it’s straight into prepping the kids’ breakfasts, packing lunches, and going to school. Sometimes it’s almost 9am before I know it and I’ve yet to eat a substantial breakfast. These banana cream pie overnight oats taste like dessert and are a breakfast I can get excited about! I prep a few jars of these at the start of the week and they’re ready when I need it. With chia seeds, Greek yogurt, and milk they are packed with a great balance of protein and carbs, but you can also add a scoop of vanilla protein powder for an extra boost! Be sure to follow my tips to give you the creamiest, dreamiest overnight oats.

Ingredients for Banana Cream Pie Overnight Oats
- Rolled oats: Good old-fashioned oats are the base of this recipe. I like to pulse mine in the food processor for a finer texture to give the end result a pudding-like consistency, but you can also leave them as is!
- Milk: I’ve used both whole milk and almond milk in this recipe and both are delicious. Whole milk will give you a creamier result and is my personal preference.
- Greek yogurt: Plain Greek yogurt is a protein powerhouse and perfect in this recipe. We are putting Greek yogurt into the overnight oats themselves and adding some as a topping as well.
- Chia seeds: Chia seeds are filled with so many valuable nutrients and also give overnight oats a great consistency.
- Vanilla extract: Pure vanilla extract gives this recipe flavor.
- Banana cream pie pudding mix: There is simply no substitute for this ingredient to get that classic banana cream pie flavor. You can use sugar-free if you want!
- Honey: Honey or pure maple syrup give a touch of sweetness. We are only using one tablespoon per serving but it’s just enough!
- Fresh bananas and vanilla wafer cookies: After the oats have been refrigerated overnight, top them with fresh banana slices, Greek yogurt (or whipped cream if you’re feeling fancy!) and crushed vanilla wafer cookies

How to Make Overnight Oats
- This first step can be skipped if you’d like your oats to be in their traditional whole size. You can simply mix the ingredients together in a bowl. For a smooth, pudding-like consistency, I do like to blend mine in a food processor. First, blend the oats in a food processor, then add in the yogurt, chia seeds, honey, pudding mix, and vanilla extract and blend until smooth. Then, while the food processor is running, slowly pour in the milk.
- I make enough for 3-4 servings at a time and then place the servings into mason jars to refrigerate overnight.
- When ready to eat, top with sliced bananas, Greek yogurt or whipped cream, and crushed vanilla wafer cookies.
Trust me, these are so good you will think you’re enjoying dessert for breakfast. These banana cream pie overnight oats are a must make during your weekly meal prep!
