Pasta salad is seriously underrated in my book. I think it’s the perfect side dish to just about anything, and the Italian chopped salad on this blog is one of my favorite summer recipes. This edamame and feta pasta salad uses the same simple dressing as the Italian chopped salad, but using edamame and feta makes this a different pasta salad altogether.
Pasta salad is obviously a go-to side dish, but we actually enjoyed this for dinner! Since pasta salad gets better after a day or so in the refrigerator absorbing all the dressing flavors, it’s the perfect recipe to make on a Sunday to enjoy for your weekday lunches. The ingredients in this pasta salad make it fresh and different, and I think it would also be delicious served with some peppery arugula for extra greens.
This pasta salad could even earn a place at your Easter table. Some families enjoy formal holiday dinners, but some are more casual, with family members piled on every couch and chair throughout the living area, grazing from a bountiful table throughout the day. Are you hosting a brunch? A baby or bridal shower? Mother’s Day event? Edamame and feta pasta salad deserves a spot at the table.

- 1 lb. dry pasta
- ½ cup olive oil
- ½ cup red wine vinegar
- 1 tsp. salt
- ¼ tsp. ground black pepper
- ½ tsp. garlic powder
- 1 tbsp. dried oregano
- 12 oz. shelled edamame (thawed if frozen)
- ½ red onion, chopped
- 6 oz. feta cheese, crumbled
- Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
- While the pasta is cooling, whisk together olive oil, red wine vinegar, salt, pepper, garlic powder, and oregano.
- Place pasta in a large bowl. Add edamame, red onion, and gently mix.
- Add dressing mixture and toss to coat.
- Pasta salad can be enjoyed immediately or made a day in advance and refrigerated.
