Edamame and Feta Pasta Salad

Ingredients
  • 1 lb. dry pasta
  • ½ cup olive oil
  • ½ cup red wine vinegar
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • ½ tsp. garlic powder
  • 1 tbsp. dried oregano
  • 12 oz. shelled edamame (thawed if frozen)
  • ½ red onion, chopped
  • 6 oz. feta cheese, crumbled
Instructions
  1. Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
  2. While the pasta is cooling, whisk together olive oil, red wine vinegar, salt, pepper, garlic powder, and oregano.
  3. Place pasta in a large bowl. Add edamame, red onion, and gently mix.
  4. Add dressing mixture and toss to coat.
  5. Pasta salad can be enjoyed immediately or made a day in advance and refrigerated.
