Almond Poppyseed Madeleines

Ingredients
  • 10 tbsp. butter, divided
  • 2 eggs at room temperature
  • ½ cup granulated sugar
  • 1 tsp. almond extract
  • ½ tsp. vanilla extract
  • 1 cup all-purpose flour
  • ⅛ tsp. salt
  • ½ tsp. baking powder
  • ½ tbsp. poppyseeds
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Melt 8 tbsp. of the butter set aside to cool.
  3. Using a stand mixer or large bowl with a hand mixer, beat together eggs and sugar until light in color. Add almond and vanilla extracts and mix again.
  4. In a medium bowl, whisk together flour, salt, baking powder, and poppyseeds.
  5. Add half of the dry ingredients to the wet ingredients and carefully fold to combine.
  6. Add the rest of the dry ingredients and fold again.
  7. Add half of the butter and fold carefully to combine.
  8. Add the rest of the butter and fold again.
  9. Melt the remaining 2 tbsp. butter and brush a madeleine pan.
  10. Carefully spoon the mixture evenly between the 12 madeleine forms.
  11. Bake for 10-15 minutes until golden brown and spongy to the touch. A toothpick inserted into the center should come out clean.
