Place all ingredients in a high-speed blender and blend until very smooth. For best results, put the liquid ingredients in the blender first and the dry ingredients afterwards.
Allow the mixture to sit for 10-15 minutes to thicken slightly. You can cook it right away but your pancakes may not be as fluffy!
If your adding any fruit, nuts, or chocolate chips to your pancakes, stir them in by hand after blending.
Meanwhile, heat up your griddle and add some oil to prevent sticking.
Pour the pancake batter onto the griddle and cook over medium-low heat until golden brown, then flip! You'll know when it's time to flip when you see bubbles on the top of the pancake.
Repeat until all your pancakes are cooked.
Serve warm with maple syrup, enjoy!
