Arugula Salad with Figs and Goat Cheese

Ingredients
  • 6 cups fresh arugula
  • 1 pint fresh figs, halved or quartered
  • 4 oz. goat cheese
  • Balsamic vinegar
  • Olive oil
  • Salt
  • Freshly ground black pepper
Instructions
  1. In a large bowl, toss arugula with fresh figs.
  2. Top with crumbled goat cheese.
  3. Drizzle with balsamic vinegar and olive oil, then sprinkle with salt and freshly ground black pepper.
  4. Toss gently and enjoy immediately!
