Cucumber, Peach, and Arugula Salad

Serves: 4-6 servings
- 4-5 big handfuls fresh arugula
- 2 Persian cucumbers, sliced
- 3 peaches, sliced
- ¼ cup feta cheese
- ¼ cup toasted chopped almonds
- Additional fresh basil leaves for topping
- 1 lemon, juiced
- ½ cup fresh basil leaves
- ½ cup olive oil
- 2 tbsp. honey
- ½ tsp. salt
- ¼ tsp. black pepper
- Place arugula in a large bowl and top with cumbers and peaches.
- In a food processor, place lemon, basil, olive oil, honey, salt, and pepper. Blend until very smooth.
- Pour the dressing over the salad and gently toss to combine. Top with feta cheese, toasted almonds, and fresh basil leaves.
- Serve immediately. Enjoy!
