Cucumber, Peach, and Arugula Salad

Ingredients
Salad
  • 4-5 big handfuls fresh arugula
  • 2 Persian cucumbers, sliced
  • 3 peaches, sliced
  • ¼ cup feta cheese
  • ¼ cup toasted chopped almonds
  • Additional fresh basil leaves for topping
Dressing
  • 1 lemon, juiced
  • ½ cup fresh basil leaves
  • ½ cup olive oil
  • 2 tbsp. honey
  • ½ tsp. salt
  • ¼ tsp. black pepper
Instructions
  1. Place arugula in a large bowl and top with cumbers and peaches.
  2. In a food processor, place lemon, basil, olive oil, honey, salt, and pepper. Blend until very smooth.
  3. Pour the dressing over the salad and gently toss to combine. Top with feta cheese, toasted almonds, and fresh basil leaves.
  4. Serve immediately. Enjoy!
