Gnocchi Alla Vodka

Ingredients
  • 2 lbs. gnocchi (I used store-bought)
  • 3 tbsp. olive oil
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • ¼ tsp. - ½ tsp. red pepper flakes
  • 2 tbsp. tomato paste
  • ¼ cup vodka
  • 28 oz. whole peeled tomatoes
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 2 tbsp. balsamic vinegar
  • ¼ cup grated parmesan cheese + more for topping
  • ½ cup heavy cream
  • 2 tbsp. milk
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
Instructions
  1. Bring a large pot of salted water to a boil and cook gnocchi according to package directions. Drain and set aside.
  2. While waiting for your water to boil, make the sauce. Heat olive oil in a medium-sized pot and add onions and garlic, cooking until fragrant. Add red pepper flakes and tomato paste and cook for a few minutes before adding vodka. Allow the vodka to simmer.
  3. Add tomatoes, oregano, basil, and balsamic vinegar. Bring to a simmer for 15-20 minutes, stirring occasionally. If you're sauce is splattering, you can add a lid to the pot.
  4. Transfer mixture to a high speed blender and blend until smooth.
  5. Return the sauce to the pot and add parmesan cheese, cream, and milk. Stir to combine, then add salt and pepper. Taste and adjust seasonings as needed.
  6. Combine the sauce and the gnocchi and serve immediately topped with additional parmesan cheese.
