Sheet Pan Honey Mustard Chicken Dinner

Ingredients
  • 1 lb. baby red potatoes, quartered
  • 1-1.5 lbs. chicken breast tenderloins
  • 1 lb. green beans, trimmed
  • 3 tbsp. olive oil
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper
  • ¼ cup honey
  • ¼ cup Dijon mustard
Instructions
  1. Preheat oven to 375 degrees Fahrenheit.
  2. Spread potatoes and chicken on a rimmed baking sheet. Drizzle with olive oil and sprinkle with salt and pepper, using your hands to evenly coat.
  3. Mix together the honey and mustard in a small bowl and set aside.
  4. Bake for 20 minutes. Add the green beans to the pan and drizzle the whole pan with the prepared honey mustard sauce.
  5. Return pan to oven and bake for an additional 20 minutes until chicken temperature is 165 degrees and the potatoes are tender.
