Salsa Verde Queso

Ingredients
  • 1 tbsp. flavorless oil
  • ½ onion, finely chopped
  • 2 jalapenos, seeded and chopped
  • 2 cloves garlic, minced
  • 6-8 tomatillos, outer skin removed, chopped
  • 2 tbsp. flour
  • 1½ cups whole milk
  • 6 oz. cream cheese
  • 8 oz. shredded cheddar cheese
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • 1 tsp. cumin
  • 1 tsp. chili powder
Instructions
  1. Heat oil in a large skillet. Add onion, jalapenos, and garlic and cook until tender. Add tomatillos and cook for a few minutes more.
  2. Add flour and stir to coat vegetables. Add milk and whisk to combine. Bring to a simmer.
  3. Add cream cheese and stir to combine until smooth. Add shredded cheddar cheese, salt, pepper, cumin, and chili powder and stir until smooth and cheese is melted.
  4. Taste and adjust seasonings as needed.
  5. Serve immediately, enjoy!
