Key Lime Pie Bars

Ingredients
Crust
  • 1 cup melted butter
  • ½ cup granulated sugar
  • 1 tsp. vanilla extract
  • ½ tsp. salt
  • 2 cups all-purpose flour
Filling
  • 2 cups granulated sugar
  • ⅓ cup all-purpose flour
  • 6 eggs
  • 1 cup key lime juice
  • Powdered sugar, for topping
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a glass or ceramic 9 x 13 baking dish with nonstick cooking spray and line with parchment paper for easy removal.
  2. In a medium bowl, whisk together butter and sugar for the crust. Add in vanilla extract, salt, and flour and mix to combine. Press evenly into the prepared baking dish adn bake for 15-20 minutes until the edges are golden brown.
  3. Meanwhile, prepare the filling. Whisk together sugar and flour. Then whisk in the eggs. Add key lime juice and whisk until well combined and smooth.
  4. Pour the filling mixture over the crust and bake for 20-25 minutes until the center is no longer raw. Let cool for at least two hours before refrigerating to cool completely.
  5. Once cool, carefully remove the bars from the pan. Slice and top with sifted powdered sugar.
  6. Enjoy!
