Lentil Sloppy Joes

Ingredients
  • 2 tbsp. oil
  • ½ yellow onion, finely chopped
  • 1 green pepper, chopped
  • 1 large carrot, peeled and chopped
  • 1 stalk celery, peeled and chopped
  • 2 cloves garlic, minced
  • 4 oz. mushrooms, chopped
  • 2 tsp. tomato paste
  • ½ tsp. salt
  • ¼ cup BBQ sauce
  • 2 tbsp. brown sugar
  • 1 cup tomato sauce
  • ½ tbsp. Worcestershire sauce
  • ¼ tsp. ground black pepper
  • 1 tsp. smoked paprika
  • ½ tsp. chili powder
  • 1 tbsp. yellow mustard
  • 3 cups cooked lentils
  • 4 buns
Instructions
  1. In a large skillet, heat olive oil. Add onion, pepper, carrot, celery, and garlic and cook until tender. Add mushrooms and cook for an additional few minutes to soften.
  2. Add the tomato paste to the pan and stir to combine. Let this cook for a minute or two before adding salt, BBQ sauce, brown sugar, tomato sauce, Worcestershire sauce, black pepper, smoked paprika, chili powder, and yellow mustard. Bring to a simmer.
  3. Add the lentils and stir to combine. Cook until heated throughout.
  4. Serve immediately, enjoy!
