Cacio e Pepe Kale with Crispy Chickpeas

Ingredients
Kale
  • 1 bunch kale, stems removed, chopped
  • 2 tbsp. olive oil
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
  • Juice of ½ a lemon
  • 3 tbsp. freshly grated parmesan cheese.
Crispy Chickpeas
  • 1 can chickpeas, rinsed, drained, and patted dry
  • 2 tbsp. olive oil
  • ½ tsp. salt
  • ¼ tsp pepper
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. smoked paprika
  • 2 eggs, fried
Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Spread the chickpeas on a rimmed baking sheet lined with foil and drizzle with olive oil. Sprinkle with salt, pepper, garlic powder, onion powder, and paprika and toss to combine.
  2. Bake for 20-25 minutes until crispy. Remove from oven to cool.
  3. While the chickpeas are cooking, heat olive oil in a large skillet. Add kale and cook until wilted. Season with salt and pepper and finish with a squeeze of lemon juice and parmesan cheese.
  4. Serve kale with crispy chickpeas and a fried egg.
