Orange Chocolate Tart

Ingredients
Crust
  • 20 chocolate graham crackers
  • 6 tbsp. melted and cooled butter
Orange Curd
  • 2 eggs + 2 egg yolks
  • 1 tbsp. cornstarch
  • ½ cup granulated sugar
  • 3 tbsp. finely grated orange zest
  • 2 tbsp. lemon juice
  • ⅔ cup freshly squeezed and strained orange juice
  • Pinch of salt
  • ½ cup butter, cut into cubes, and refrigerated until ready for use
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine graham crackers and melted butter. Press into a tart shell with a removable bottom. Use a metal measuring cup or a glass to press the bottom down.
  3. Bake the tart for 10-15 minutes.
  4. In a double boiler whisk together eggs, egg yolks, cornstarch, sugar, orange zest, lemon juice, orange juice, and salt. Cook over low heat, whisking constantly, until the temperature reaches 160-175 degrees Fahrenheit. This will take about 15-20 minutes.
  5. Once that temperature is reached, remove from heat. Remove the butter from the refrigerator. Add butter, one cube at a time, whisking until fully combined after each addition. Once all the butter is added, set the curd aside to cool.
  6. Once cool, pour into the prepared tart shell. Refrigerate overnight before serving.
