Greek Yogurt Doughnuts with Strawberry Glaze

Ingredients
  • 1¾ cup all-purpose flour
  • 1½ tsp. baking powder
  • ⅛ tsp. salt
  • 3 tbsp. granulated sugar
  • ½ cup canola or vegetable oil
  • ¾ cup plain Greek yogurt
  • 2 eggs
  • ¼ cup milk
  • 1 tsp. vanilla
  • 4 oz. cream cheese, softened
  • 1 cup strawberries
  • ¾ cup powdered sugar
  • 1-2 tbsp. milk
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Spray two donut pans (for a total of 12 doughnuts) with non-stick cooking spray.
  3. In a medium bowl, whisk together eggs, oil, Greek yogurt, ¼ cup milk, and vanilla.
  4. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Bake for 20-22 minutes until toothpick inserted into doughnut comes out clean.
  7. Allow to cool before glazing.
  8. For the glaze, beat cream cheese with a mixer until creamy. Slowly add powdered sugar. Add strawberries and mix again. Add milk if desired until desired consistency is reached, one tablespoon at a time.
Notes
Once glazed, the doughnuts are best eaten immediately. The doughnuts can be made a day in advance, but for best results should not be glazed until they will be eaten.
