Sweet Potato Pecan Casserole

Ingredients
Sweet Potatoes
  • 4 sweet potatoes (about 3 lbs.)
  • 1 tsp. salt
  • ¼ tsp. freshly ground black pepper
  • 2 tbsp. maple syrup
  • 3 tbsp. melted butter
  • ¼ cup milk
Topping
  • 1 cup rolled oats
  • 1 cup chopped pecans
  • ¼ cup whole wheat flour
  • 4 tbsp. brown sugar
  • ½ tsp. cinnamon
  • 4 tbsp. melted butter
Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Prick the potatoes all over with a fork and bake until tender. Depending on the size, this will take about 45 minutes - 1 hour. Decrease oven temperature to 350 degrees Fahrenheit.
  2. Once the potatoes are cooked and cooled enough to handle, remove them from their skins and place in a large bowl. Mash with salt, pepper, 2 tbsp. maple syrup, 3 tbsp. melted butter, and milk. Mash until smooth and set aside.
  3. In a small bowl, combine oats, pecans, flour, brown sugar, cinnamon, and melted butter.
  4. Spread the sweet potatoes in a baking dish and top with pecan-oat topping.
  5. Bake for 30 minutes until the pecan-oat topping begins to brown.
