Thanksgiving Croissant Dressing

Ingredients
  • 2 tbsp. butter
  • ½ yellow onion, chopped
  • 3 stalks celery, chopped
  • 8 oz. mushrooms, chopped
  • 8 large croissants, shredded into bite-sized pieces
  • 1 cup chicken stock
  • 1 tsp. salt
  • ½ tsp. freshy ground black pepper
  • 1 tbsp. Dijon mustard
  • 1 tsp. garlic powder
  • 1 tsp. ground dried thyme
  • 1 tsp. dried sage
  • ½ cup dried cranberries
  • ¼ cup pepitas, for topping, optional
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large skillet, melt butter. Add onion, celery, and mushrooms and cook until tender. Set aside to cool.
  3. In a large bowl, combine vegetable mixture, croissants, chicken stock, salt, pepper, mustard, garlic powder, thyme, sage, and cranberries. Stir to combine.
  4. Transfer mixture to a baking dish. Top with pepitas. Bake for 40-45 minutes until heated through and the top is golden brown.
  5. Serve immediately, enjoy!
