Zucchini Chips with Lemon Aioli

Ingredients
Zucchini Chips
  • 2 large zucchini
  • ¾ cup all-purpose flour
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 eggs
  • ¾ cup breadcrumbs
  • ½ cup finely grated parmesan cheese
  • Oil for frying
Lemon Aioli
  • ½ cup mayonnaise
  • 3 tbsp. plain Greek yogurt
  • ¼ tsp. salt
  • Juice of ½ a lemon
Instructions
  1. Slice zucchini and set aside.
  2. In a shallow dish, mix together flour, salt, pepper, garlic powder, and onion powder.
  3. In a separate shallow dish, beat eggs.
  4. Mix breadcrumbs and parmesan cheese in a third separate shallow dish.
  5. Heat oil in a large skillet.
  6. Coat zucchini on both sides first in flour mixture, then beaten eggs, then breadcrumb mixture.
  7. Fry zucchini on both sides in heated oil until golden brown. Set on a plate lined with paper towels once browned.
  8. In a small bowl, combine mayonnaise, Greek yogurt, salt, and lemon juice.
  9. Serve immediately.
