Healthy Chocolate Chunk Banana Bread

Ingredients
  • 3 ripe bananas
  • ½ cup olive oil
  • ½ cup honey
  • 2 eggs
  • ¼ cup almond milk
  • 1 tsp. vanilla extract
  • 2 cups whole wheat flour
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • 6 oz. semi-sweet chocolate, chopped
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick cooking spray and line with parchment paper for easy removal.
  2. In a large bowl, mash bananas. Add olive oil, honey, eggs, almond milk, and vanilla and mix to combine.
  3. In a medium bowl, whisk together whole wheat flour, salt, cinnamon, baking powder, and baking soda.
  4. Add dry ingredients to wet ingredients to wet ingredients and stir until just combined.
  5. Fold in chocolate chunks and pour batter into prepared loaf pan.
  6. Bake for 50-55 minutes until a toothpick inserted into the center comes out clean.
  7. Let cool in pan for 5-10 minutes then transfer to a wire rack to cool completely.
