Instant Pot White Cheddar Cauliflower Mac and Cheese

Ingredients
  • 4 cups cauliflower florets
  • 4 cups vegetable broth, divided
  • 16 oz. pasta of choice*
  • 4 tbsp. butter
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • 16 oz. shredded white cheddar cheese
  • ¼ cup milk
Instructions
  1. Place cauliflower florets and 1 cup of broth in the instant pot. Set to high pressure and cook for 4 minutes. Manually or naturally release pressure and then transfer to a blender. Blend until smooth.
  2. Place the remaining 3 cups of broth, pasta, butter, garlic powder, onion powder, salt, and pepper.
  3. Set to high pressure and cook for 5 minutes.
  4. Manually release pressure.
  5. Add cheddar cheese and milk and stir to combine. Let sit for a few minutes until melted.
  6. Add cauliflower puree to instant pot and stir to combine.
  7. Serve immediately. Enjoy!
