Basil Balsamic Chopped Salad

Ingredients
  • 1 head red lettuce, cut into small pieces
  • 2 cups chopped red cabbage
  • 2 cups finely chopped cauliflower
  • 2 cups finely chopped broccoli florets
  • 2 large carrots, julienned
  • ¼ cup chopped red onion
  • ½ cup olive oil
  • ½ cup balsamic vinegar
  • ½ cup finely chopped fresh basil
  • ½ tsp. salt
  • ¼ tsp. freshly ground black pepper
  • Grated parmesan cheese, for topping
Instructions
  1. In a large bowl, combine lettuce, cabbage, cauliflower, broccoli, carrots, and red onion. I like having everything in this salad chopped into nice small pieces!
  2. In a small bowl or a food processor, combine olive oil, balsamic vinegar, basil, salt, and pepper. Whisk or pulse to combine.
  3. When ready to serve, toss dressing with salad and top with parmesan cheese.
  4. Enjoy!
