Caprese Farro Salad

Ingredients
  • 2 cups cooked farro
  • ¼ cup balsamic vinegar
  • 4 tbsp. olive oil
  • 1 pint cherry or grape tomatoes, halved
  • 4-6 oz. fresh burrata
  • ½ cup basil leaves, cut into ribbons
Instructions
  1. In a large bowl, toss farro with balsamic vinegar and olive oil. Add tomatoes and stir to combine.
  2. Tear fresh burrata into bite-sized pieces and add to the salad.
  3. Top with fresh basil and serve!
