Caprese Farro Salad

Serves: 4-6 servings
- 2 cups cooked farro
- ¼ cup balsamic vinegar
- 4 tbsp. olive oil
- 1 pint cherry or grape tomatoes, halved
- 4-6 oz. fresh burrata
- ½ cup basil leaves, cut into ribbons
- In a large bowl, toss farro with balsamic vinegar and olive oil. Add tomatoes and stir to combine.
- Tear fresh burrata into bite-sized pieces and add to the salad.
- Top with fresh basil and serve!
