Instant Pot Honey Garlic Chicken

Ingredients
  • 2 tbsp. olive oil
  • 6-8 cloves garlic, minced
  • 6-8 boneless, skinless chicken thighs cut into 1-2 inch pieces
  • ¼ cup soy sauce
  • 4 tbsp. honey
  • 2 tbsp. rice vinegar
  • ¼ tsp. freshly ground black pepper
  • ½ tsp. salt
  • 2½ tbsp. cornstarch
  • 2 tbsp. water
Instructions
  1. Place olive oil in your instant pot and turn it to "sauté" setting. Heat oil then add garlic and cook for a few minutes until fragrant.
  2. Add chicken thighs and cook for 3-5 minutes, stirring occasionally to brown the meat.
  3. Add soy sauce, honey, rice vinegar, black pepper, and salt. Stir to combine.
  4. Place lid on instant pot and set to high pressure for 9 minutes.
  5. When done cooking, allow to manually or naturally release.
  6. In a small bowl, use a fork to mix cornstarch and water to form a slurry.
  7. Use a slotted spoon to remove chicken from the sauce and transfer to a plate
  8. Add cornstarch mixture to remaining sauce in instant pot and set the instant pot to "saute" setting.
  9. Cook for a few minutes until thickened. Return chicken to pot and stir to coat.
  10. Serve over rice or rice noodles with vegetables of choice (we love broccoli!).
