In a large bowl, combine pork, salt, black pepper, garlic powder, sage, onion powder, thyme, and maple syrup. Using your hands, mix well to combine.
Heat a thin layer of oil in a large frying pan or skillet. Form patties out of the pork mixture using your hands, and cook over medium low heat for 5-8 minutes per side until golden brown and internal temperature is 160 degrees Fahrenheit.
Once cooked, remove from pan and transfer to a plate lined with paper towels. Continue until all sausage is cooked.
Sausage can be enjoyed within a few days, or frozen for future use. Make sure you freeze with wax paper or parchment paper in between patties.
