Cinnamon Crunch Coffee Cake

Ingredients
Cake
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract
  • 1 cup plain Greek yogurt
  • 2½ cups all-purpose flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ½ cup milk
Streusel
  • ½ cup butter, softened
  • 1 tbsp. cinnamon
  • ¾ cup brown sugar
  • ¼ cup flour
  • ⅛ tsp. salt
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Using a stand mixer or a hand mixer, cream together butter and sugars. Add eggs, one at a time, beating well after each addition. Add extracts and Greek yogurt and beat again until well combined.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. Add dry ingredients to wet ingredients and mix until just combined. Add milk and mix until just combined.
  5. Spray a 9 inch springform pan with nonstick cooking spray and set on a large rimmed baking sheet (to prevent any leakage onto the floor of your oven). Pour the batter into the prepared pan.
  6. In a small bowl combine butter, cinnamon, brown sugar, flour, and salt for the streusel topping. It will look like wet sand.
  7. Sprinkle the streusel topping over the cake batter.
  8. Bake for 45-50 minutes until a toothpick inserted into the center comes out clean. The streusel topping will melt a bit, but that's exactly what you want! It'll give your cake a crunchy and sweet cinnamon topping.*
  9. Let cool for at least 15 minutes before removing the outside of the pan.
  10. Top with sifted powdered sugar and serve!
Notes
*If you want a more traditional streusel topping, just leave the streusel topping off until the last 15 minutes of baking.
