Instant Pot BBQ Pulled Pork

Ingredients
  • 1 tbsp. oil
  • ½ yellow onion, diced
  • 3 cloves garlic, minced
  • ¼ cup molasses
  • 1 cup ketchup
  • ½ cup brown sugar
  • ¼ cup apple cider vinegar
  • 1 tbsp. Worcestershire sauce
  • 2 tsp. smoked paprika
  • ½ tsp. chili powder
  • 2 tbsp. yellow mustard
  • ¼ tsp. ground black pepper
  • A few dashes of hot sauce
  • 2 - 2.5 lb. pork loin
Instructions
  1. Set instant pot to saute and heat oil. Add onion and garlic and cook until tender.
  2. Add molasses, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, chili powder, yellow mustard, black pepper, and hot sauce to instant pot. Bring to a simmer.
  3. Add pork loin to instant pot and spoon the sauce over the pork.
  4. Cover and set to high pressure for 45 minutes.
  5. Allow to naturally release, then check the internal temperature of the pork to ensure it is 160 degrees Fahrenheit.
  6. Remove pork from pressure cooker and place on a cutting board. Use a knife to chop the meat then shred with two forks. Return to pressure cooker and stir to mix with sauce.
  7. Serve on buns with cole slaw. Enjoy!
