Chicken Parmesan Meatball Skillet

Ingredients
Meatballs
  • 1 lb. ground turkey
  • 1 egg
  • ½ cup Italian breadcrumbs
  • ¼ cup grated parmesan cheese
  • 2 tbsp. olive oil
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
Sauce
  • 2 tbsp. olive oil
  • ½ yellow onion, diced
  • 3 cloves garlic, minced
  • 28 oz. canned tomato sauce
  • 15 oz. canned diced tomatoes
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • ½ tbsp. dried oregano
  • 2 tsp. dried basil
  • ¾ cup shredded mozzarella cheese
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine turkey, egg, breadcrumbs, parmesan cheese, olive oil, salt, pepper, onion powder, and garlic powder. Set aside.
  3. Heat olive oil in a large oven-proof skillet. Add onions and garlic and cook until onions are translucent.
  4. Add tomato sauce, diced tomatoes, salt, pepper, oregano, and basil and simmer for 5-10 minutes.
  5. Using your hands, form meatballs with the turkey mixture and gently place in the tomato sauce.
  6. Once all the meatballs are in the skillet, bake for 30 minutes.
  7. Sprinkle cheese on meatballs and bake for an additional 5 minutes until cheese is melted.
  8. Serve with garlic bread, if desired.
