Orange Poppyseed Bread

Ingredients
Bread
  • 2 cups all-purpose flour
  • ½ tbsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ¾ cup granulated sugar
  • 3 tbsp. poppyseeds
  • 3 eggs
  • ¾ cup plain Greek yogurt
  • ½ cup flavorless oil (I used vegetable oil)
  • 1 tsp. vanilla extract
  • 3 tbsp. grated fresh orange zest
  • ¼ cup orange juice
  • 3 tbsp. milk
Glaze
  • 1½ cups powdered sugar
  • 2-4 tbsp. orange juice
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick cooking spray and line with parchment paper for easy bread removal.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, sugar, and poppyseeds.
  3. In a large bowl, whisk together eggs, yogurt, oil, vanilla extract, orange zest, orange juice, and milk.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Pour the batter into the prepared pan and bake for 50-55 minutes until a toothpick inserted into the center comes out clean.
  6. Allow bread to cool for 5-10 minutes in the pan, then remove and transfer to a wire rack to cool completely.
  7. Whisk together powdered sugar and 2 tbsp. orange juice. Gradually add more orange juice until desired consistency is reached.
  8. Pour glaze over the bread. Bread is best enjoyed within 48 hours of glazing.
