Guinness Beef Stew

Ingredients
  • 2.5 lbs. cubed beef stew meat
  • 1 yellow onion, chopped
  • 4 carrots, peeled and sliced into rounds
  • 2 stalks celery, cliced
  • 2-3 Yukon gold potatoes, peeled and chopped
  • 2 tbsp. tomato paste
  • 15 oz. canned diced tomatoes
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 2 Guinness beers
  • 2 cups beef broth
  • 1+ tsp. salt
  • ½ tsp. ground black pepper
  • 1 tsp. smoked paprika
  • 1 tsp. ground dried thyme
  • Pinch of red pepper flakes
Instructions
  1. Brown beef in a large skillet on all sides and add to slow cooker.
  2. Add onion, carrots, celery, potatoes, tomato paste, diced tomatoes, garlic, bay leaves, beer, broth, salt, pepper, paprika, thyme, and red pepper flakes. Stir to combine.
  3. Cook on low for 8 hours or high for 4 hours. Remove bay leaves, taste and add more salt if needed. Enjoy!
