Guinness Beef Stew

Serves: 6-8 servings
- 2.5 lbs. cubed beef stew meat
- 1 yellow onion, chopped
- 4 carrots, peeled and sliced into rounds
- 2 stalks celery, cliced
- 2-3 Yukon gold potatoes, peeled and chopped
- 2 tbsp. tomato paste
- 15 oz. canned diced tomatoes
- 3 cloves garlic, minced
- 2 bay leaves
- 2 Guinness beers
- 2 cups beef broth
- 1+ tsp. salt
- ½ tsp. ground black pepper
- 1 tsp. smoked paprika
- 1 tsp. ground dried thyme
- Pinch of red pepper flakes
- Brown beef in a large skillet on all sides and add to slow cooker.
- Add onion, carrots, celery, potatoes, tomato paste, diced tomatoes, garlic, bay leaves, beer, broth, salt, pepper, paprika, thyme, and red pepper flakes. Stir to combine.
- Cook on low for 8 hours or high for 4 hours. Remove bay leaves, taste and add more salt if needed. Enjoy!
