Spicy Sausage and Kale Rigatoni

Ingredients
  • 1 lb. dry rigatoni pasta
  • 1 lb. Italian sausage (mild or hot)
  • 1 bunch kale, stems removed, chopped
  • 1 tbsp. all-purpose flour
  • 15 oz. canned tomato sauce
  • 15 oz. canned diced tomatoes
  • 1 cup heavy cream
  • ½ tsp. salt
  • ¼ tsp. freshly ground black pepper
  • ½ cup finely grated parmesan cheese
Instructions
  1. Bring a large pot of salted water to a boil and cook pasta according to package directions, drain and set aside.
  2. In the same pot, brown Italian sausage, breaking it up into small pieces with a spatula as it cooks.
  3. Add kale and cook until wilted.
  4. Add flour and stir to coat the sausage and kale.
  5. Add tomato sauce, diced tomatoes, and heavy cream. Bring to a simmer and allow to thicken. Add salt and pepper and stir to combine.
  6. Stir in parmesan cheese. Taste and add more salt and pepper if needed.
  7. Serve topped with additional parmesan cheese and crack of freshly ground pepper, if desired.
