Chicken Parmesan Pasta

Ingredients
  • 1 lb. penne pasta
  • 2 tbsp. olive oil
  • 4-5 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 28 oz. canned tomato sauce
  • 28 oz. canned diced tomatoes
  • ½ tbsp. dried oregano
  • 2 tsp. dried basil
  • Pinch of red pepper flakes
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • 3 cups cooked shredded chicken
  • ½ cup shredded parmesan cheese
  • ½ cup shredded mozzarella cheese
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and set aside.
  3. In the same pot, heat olive oil. Add garlic and onions and cook until translucent.
  4. Add tomato sauce, diced tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer and cook for 15-20 minutes. Taste and adjust the seasonings if desired.
  5. Return pasta to the pot and stir to combine. Add chicken and stir.
  6. Place pasta in a large baking dish, 8x12 or 9x13. Top with both types of shredded cheese.
  7. Bake for 20-30 minutes until cheese is melted and pasta is heated through.
