Cold-Fighting Chicken Noodle Soup

Ingredients
  • 2 tbsp. olive oil
  • 3 carrots, peeled and diced
  • 3 stalks celery, diced
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 2 inch knob ginger, peeled and grated
  • 8 cups chicken broth
  • 2 cups cooked, shredded chicken
  • 1 tsp. salt + more to taste
  • ¼ tsp. freshly ground black pepper
  • 2 bay leaves
  • 1 tsp. ground dried thyme
  • 2 tsp. dried ground turmeric
  • ⅛ tsp. cayenne pepper
  • 4 cups egg noodles
Instructions
  1. Heat olive oil in a large pot. Add carrots, celery, onion, garlic, and ginger and cook until tender.
  2. Add chicken broth, chicken, salt, black pepper, bay leaves, thyme, turmeric, and cayenne pepper.
  3. Bring to a simmer and add noodles. Cook for about 10-15 minutes until noodles are tender.
  4. Enjoy!
