Cold-Fighting Chicken Noodle Soup

Serves: 5-6 servings
- 2 tbsp. olive oil
- 3 carrots, peeled and diced
- 3 stalks celery, diced
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 2 inch knob ginger, peeled and grated
- 8 cups chicken broth
- 2 cups cooked, shredded chicken
- 1 tsp. salt + more to taste
- ¼ tsp. freshly ground black pepper
- 2 bay leaves
- 1 tsp. ground dried thyme
- 2 tsp. dried ground turmeric
- ⅛ tsp. cayenne pepper
- 4 cups egg noodles
- Heat olive oil in a large pot. Add carrots, celery, onion, garlic, and ginger and cook until tender.
- Add chicken broth, chicken, salt, black pepper, bay leaves, thyme, turmeric, and cayenne pepper.
- Bring to a simmer and add noodles. Cook for about 10-15 minutes until noodles are tender.
