Arugula Salad with Butternut Squash and Goat Cheese

Ingredients
  • 5 oz. arugula
  • 2 cups cubed butternut squash
  • 5 tbsp. olive oil, divided
  • ¼ cup apple cider vinegar
  • 2 tbsp. honey
  • ¼ tsp. salt + more to taste
  • ¼ tsp. freshly ground black pepper + more to taste
  • ½ cup roasted cashews
  • 4 oz. goat cheese
Instructions
  1. Preheat oven to 400 degrees Fahrenheit and line a rimmed baking sheet with aluminum foil. Spread butternut squash on the pan and drizzle with 2 tbsp. olive oil. Sprinkle with salt and pepper and roast for 15 minutes until tender and golden brown. Set aside to cool.
  2. In a small bowl, whisk together apple cider vinegar, honey, 3 tbsp. olive oil, ¼ tsp. salt, ¼ tsp. freshly ground black pepper. Taste and add more salt if needed.
  3. Place arugula in a large bowl and toss with the dressing. Add butternut squash and cashews and gently toss again. Serve topped with crumbled goat cheese.
