Tomato and White Bean Soup

Serves: 5-6 servings
- 2 tbsp. olive oil
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 28 oz. can crushed tomatoes
- 28 oz. can diced tomatoes
- 2 cans white beans (great northern or navy beans are perfect)
- 2 cups vegetable broth
- 1 tsp. salt + more to taste
- ¼ tsp. freshly ground black pepper
- 2 tsp. dried basil
- 2 tsp. dried oregano
- ½ tsp. ground dried thyme
- Heat olive oil in a large pot. Add onion and garlic and saute until tender.
- Add both cans of tomatoes, white beans, broth, salt, pepper, basil, oregano, and thyme.
- Bring to a simmer for 20 minutes.
- Taste and add more seasonings as desired.
- Serve with grilled cheese, cornbread, garlic bread, or your other favorite bread for dunking!
