Tomato and White Bean Soup

Ingredients
  • 2 tbsp. olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 28 oz. can crushed tomatoes
  • 28 oz. can diced tomatoes
  • 2 cans white beans (great northern or navy beans are perfect)
  • 2 cups vegetable broth
  • 1 tsp. salt + more to taste
  • ¼ tsp. freshly ground black pepper
  • 2 tsp. dried basil
  • 2 tsp. dried oregano
  • ½ tsp. ground dried thyme
Instructions
  1. Heat olive oil in a large pot. Add onion and garlic and saute until tender.
  2. Add both cans of tomatoes, white beans, broth, salt, pepper, basil, oregano, and thyme.
  3. Bring to a simmer for 20 minutes.
  4. Taste and add more seasonings as desired.
  5. Serve with grilled cheese, cornbread, garlic bread, or your other favorite bread for dunking!
