Blueberry Lemon Lavender Sorbet

Ingredients
  • 3 cups water
  • 2 cups granulated sugar
  • 2 tbsp. lemon zest
  • ¼ cup dried lavender
  • 2 cups fresh blueberries
  • 1¼ cups lemon juice
Instructions
  1. In a small saucepan, combine water, sugar, lemon zest, and lavender. Simmer over low heat for 20 minutes, then allow to cool completely.
  2. Once the mixture is cooled, strain and add to a large bowl.
  3. Meanwhile, process the blueberries in a food processor or high speed blender until smooth. Add the blueberry puree and lemon juice to the lavender lemon simple syrup.
  4. Cover the bowl and refrigerate for at least 8 hours or overnight. While the mixture is chilling, make sure the freezer bowl for your ice cream maker goes into the freezer as well to ensure it is frozen solid.
  5. Transfer the liquid mixture to the ice cream maker and turn on according to the ice cream maker instructions. My ice cream maker takes about 25-30 minutes to freeze sorbet to my desired consistency.
  6. Once the sorbet reaches your desired consistency, transfer to a freezer-safe container with a lid to freeze completely.
  7. Serve and enjoy!
