Cherry Almond Kale Salad

Ingredients
  • 1 large bunch curly kale, stems removed, chopped
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • ½ tsp. salt
  • ½ tsp. garlic powder
  • 1 tbsp. Dijon mustard
  • ¼ tsp. freshly ground black pepper
  • 1 cup halved cherries
  • ½ cup sliced toasted almonds
Instructions
  1. Place the kale in a large bowl.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, salt, garlic powder, mustard, and black pepper.
  3. Pour over the kale. Using your hands, massage dressing into kale, ensuring every part is coated.
  4. Add cherries and toss.
  5. Serve topped with almonds and enjoy!
