Tater Tot Breakfast Casserole

Ingredients
  • 12 eggs
  • ½ cup milk
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 1 tsp. hot sauce
  • 2 bell peppers, chopped (I used one yellow and one red)
  • 1 jalapeno pepper, seeds removed, chopped
  • 16 oz. frozen tater tots
  • 2 cups shredded cheddar cheese
Instructions
  1. Preheat oven to 350 degrees Fahrenheit and spray a baking dish with non-stick cooking spray. I used an 8 x 12 dish but an oval baking dish would also work well.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, and hot sauce.
  3. Place tater tots in the bottom of the casserole dish. Top with chopped peppers and half of the cheese.
  4. Pour egg mixture over tater tots and peppers and top with remaining cheese.
  5. Bake for 40-45 minutes until set. Let cool for 5 minutes and then serve.
Notes
This dish can easily be made the day before and refrigerated!
