Cheesy Buffalo Chicken Chowder

Ingredients
  • 2 tbsp. oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 3 tbsp. flour
  • 2 large russet potatoes, peeled and chopped
  • 2 cups milk (I used whole)
  • 4 cups chicken broth
  • ⅓ cup buffalo sauce (I like Frank's Red Hot Buffalo)
  • 1 can yellow corn, drained
  • 1 tsp. salt
  • ¼ tsp. ground black pepper
  • 2 cups cooked shredded chicken
  • 1½ cups shredded cheddar cheese
Instructions
  1. Heat oil in a large pot. Add onions and garlic and cook until tender. Stir in flour.
  2. Add potatoes, milk, chicken broth, buffalo sauce, corn, salt, and pepper. Bring to a simmer and cook until potatoes are tender.
  3. Add chicken and cheese and stir until cheese is melted.
  4. Serve topped with sliced green onions, more shredded cheese, or extra buffalo sauce!
