Instant Pot Sweet Potato Black Bean Chili

Ingredients
  • 28 oz. can crushed tomatoes
  • 15 oz. can fire-roasted tomatoes
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 large sweet potato, peeled and chopped
  • 1 red bell pepper, chopped
  • 2 cans black beans, rinsed and drained
  • 1 cup vegetable broth
  • 1½ tsp. salt
  • ½ tbsp. cumin
  • ¼ tsp. ground black pepper
  • 1 tsp. chili powder
  • 2 tsp. smoked paprika
Instructions
  1. Combine all ingredients in the instant pot and set to high pressure for 15 minutes. All pressure to release naturally, or use the manual release feature.
  2. Serve topped with sour cream, cilantro, avocado, or shredded cheese.
  3. Crock Pot instructions: combine all ingredients and cook on low until sweet potatoes are tender (about 8 hours).
  4. Stovetop instructions: combine all ingredients and simmer until sweet potatoes are tender, about 45 minutes.
