Tortellini Spinach Parmesan Soup

Ingredients
  • 2 tbsp. olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 2 tbsp. all-purpose flour
  • 1 15 oz. can tomatoes
  • 4-5 cups chicken or vegetable broth
  • 3 cups milk
  • 1 tsp. Italian seasoning
  • 1 tsp. salt + more to taste
  • ¼ tsp. ground black pepper
  • ½ cup finely grated parmesan cheese
  • 16 oz. cheese tortellini
  • 10 oz. fresh spinach
Instructions
  1. Heat olive oil in a large pot. Add onion, garlic, and celery and cook for a few minutes until tender.
  2. Add flour and stir to combine.
  3. Add tomatoes, broth, milk, Italian seasoning, salt, and black pepper. Bring to a simmer.
  4. Stir in parmesan cheese and add tortellini. Simmer until tender.
  5. Stir in spinach by the handful until tender and wilted.
  6. Taste and add more salt and pepper to taste.
  7. Serve topped with additional parmesan cheese, if desired.
  8. Enjoy!
