Chicken Parmesan Gnocchi Bake

Ingredients
  • 2 x 16 oz. packages of gnocchi (or make your own)
  • 2 tbsp. olive oil
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 28 oz. canned tomato sauce
  • 15 oz. canned diced tomatoes
  • 1 tbsp. dried oregano
  • 1 tsp. dried basil
  • ¼ tsp. ground black pepper
  • ½ tsp. ground dried thyme
  • 1 tsp. salt
  • 2½ cups cooked shredded chicken
  • 1½ cups shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Bring a large pot of salted water to a boil and cook gnocchi according to package directions. Drain and set aside.
  3. In a large pot on the stove, heat olive oil. Add garlic and onion and cook until onions are translucent. Add tomato sauce, diced tomatoes, oregano, basil, pepper, thyme, and salt. Reduce to a simmer, then remove from heat.
  4. Add cooked chicken, gnocchi, and half of the mozzarella cheese. Stir to combine.
  5. Pour into a 13 x 9 baking dish. Top with remaining mozzarella cheese and parmesan cheese.
  6. Bake for 30-35 minutes until bubbling and cheese is melted.
