This cozy meatloaf recipe is packed with flavor and sure to be your new go-to meatloaf recipe!
Ingredients
Meatloaf
¾ cup Italian seasoned breadcrumbs
½ cup milk
1 yellow onion
1 lb. ground turkey
1 lb. ground beef
1 tbsp. olive oil
2 eggs
2 tsp. garlic powder
2 tbsp. ketchup
2 tsp. salt
2 tsp. oregano
2 tsp. dried basil
1 tsp. dried thyme
½ tsp. black pepper
1 tbsp. Worcestershire sauce
Glaze
½ cup ketchup
2 tbsp. brown sugar
½ tbsp. apple cider vinegar
¼ cup BBQ sauce
Instructions
Preheat oven to 350 degrees. In a large bowl, combine the breadcrumbs and milk. Let the mixture sit for a few minutes to absorb the moisture. While you're waiting, finely chop your onion or grate with a box grater. A food processor will also work; we just want to ensure the pieces of onion are tiny.
Then to the same bowl add the ground turkey, ground beef, olive oil, eggs, garlic powder, ketchup, salt, oregano, basil, thyme, pepper, and Worcestershire sauce. Mix to combine, but do not overmix.
Line a rimmed baking sheet with aluminum foil and spray with nonstick cooking spray. Form two even loaves with some space in between.
Bake in the oven for 40 minutes. While it's baking, prepare your glaze. In a small bowl mix together the ketchup. brown sugar, apple cider vinegar, and BBQ sauce. After 40 minutes have passed, glaze the meatloaf, then bake for another 20 minutes until the internal temperature reaches 165 degrees.
Allow to rest for 10 minutes, then slice and serve with mashed potatoes.
Enjoy!
