Beefy Breakfast Skillet

This high-protein beefy breakfast skillet is a great option for a healthy, filling breakfast and can be made in advance as meal prep!
Ingredients
  • 3 lbs. Yukon gold potatoes
  • 3 tbsp. olive oil, divided
  • 1½ tsp. salt
  • ½ tsp freshly ground black pepper
  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • 2 tsp. oregano
  • 1 tsp. smoked paprika
  • 1 lb. beef sausage
  • 2 red bell peppers, de-seeded and chopped
  • ½ red onions, chopped
  • For topping: eggs, chives, goat cheese, chili onion crunch, avocado
Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper and set aside.
  2. Chop the potatoes and place them on the prepared pan. No need to peel!
  3. In a small bowl, mix together the salt, pepper, onion powder, garlic powder, oregano, and paprika.
  4. Drizzle the potatoes with 2 tbsp. of the olive oil and sprinkle with about ⅔ of the seasoning. Use your hands to toss to coat and roast in the oven for about 30 minutes until crispy and golden, tossing every 10 minutes to make sure they cook evenly.
  5. In a skillet, heat the remaining 1 tbsp. olive oil and add the sliced sausage. Cook for a few minutes, then add the peppers and red onions. Cook until the vegetables are tender and the sausage is beginning to brown. Add the remaining seasoning and toss to coat.
  6. At this point you can either add the potatoes to the skillet, or plate them in a shallow bowl and put the sausage on top.
  7. Top your breakfast bowl with a fried egg, fresh chives, goat cheese, chili onion crunch, and avocado.
  8. Enjoy!
