These banana cream pie overnight oats are simply delicious! They're breakfast that tastes like dessert.
Ingredients
Per Serving
½ cup rolled oats
¼ cup plain Greek yogurt
1 tbsp. chia seeds
1 tbsp. honey
1 tbsp. banana cream pie pudding mix
¼ tsp. vanilla extract
½ cup milk
Toppings: more Greek yogurt or whipped cream, fresh bananas, crushed vanilla wafer cookies
Instructions
There are two options for your overnight oats. You can simply mix the ingredients together in a bowl or blend them in a food processor. For a smooth, pudding-like consistency, I do like to blend mine in a food processor. The quantities above are for a single serving, I like to triple or quadruple the batch.
First, blend the oats in a food processor, then add in the yogurt, chia seeds, honey, pudding mix, and vanilla extract and blend until smooth. Then, while the food processor is running, slowly pour in the milk.
I make enough for 3-4 servings at a time and then place the servings into mason jars to refrigerate overnight.
When ready to eat, top with sliced bananas, Greek yogurt or whipped cream, and crushed vanilla wafer cookies.
